Ham Club Sandwiches

Thin buttered toast filled with freshly broiled ready-to-eat ham, lettuce and a little mayonnaise, trimmed and cut into triangles.

Method

Steps

  1. Step 1

Have six actual thin slices of plain, unglazed, fully cooked ready-to-eat boneless ham. Keep the ham and the finished mayonnaise sauce refrigerated until needed. Wash the six tender lettuce leaves and drain them thoroughly.

  2. Step 2

Preheat the broiler. Lay the ham slices on a broiler rack about four inches from the heat and broil, turning once, until hot throughout and at least 74°C (165°F), checked with a suitable fine-tip thermometer. Adjust the time to the actual thin slices.

  3. Step 3

Lightly butter all twelve thin bread slices, then toast them until golden. Put one freshly broiled ham slice on each of six lower toasts.

  4. Step 4

Spread a very little mayonnaise over each lettuce leaf, put the leaves over the ham and close with the six remaining toasts. Trim the crusts neatly and cut each sandwich into two triangular halves.

  5. Step 5

Arrange the freshly assembled sandwiches on an oven-safe serving dish and warm briefly in a preheated 180°C conventional oven, using about one minute as a guide. Serve immediately; this warming does not replace the ham heating or permit warm holding for later service.
