Curried Eggs in Apple and Almond Milk Sauce

Halved hard-boiled eggs warmed in a gently thickened milk sauce with onion, apple, almonds and curry powder.

  1. Step 1

    Hard-boil six eggs, cool and peel them, then cut into halves. Whisk cornstarch into a little cold measured milk before cooking.

  2. Step 2

    Melt butter in a wide saucepan and soften chopped onion and apple for about five minutes. Stir in ground almonds, curry powder and salt.

  3. Step 3

    Pour in remaining milk and the cornstarch slurry. Simmer gently for ten minutes, stirring until lightly thickened and the apple pieces are tender.

  4. Step 4

    Lay egg halves in the sauce and warm gently until their centres reach 74 °C without breaking the yolks. Serve hot, offering optional croutons and briefly fried parsley separately.
