Fried Eggs with Bananas

Golden pan-fried banana halves topped with freshly fried eggs.

Method

Steps

  1. Step 1

Peel the six ripe bananas and split each lengthwise. Put the twelve halves on a dish, cover with cold milk and sprinkle with the half teaspoon salt. Cover and keep refrigerated for thirty minutes.

  2. Step 2

Lift the banana halves from the milk and roll lightly in flour. Heat the one and a half tablespoons melted butter in a frying pan and gently fry the bananas for about four minutes on each side, until golden and the coating is fully cooked. Work in batches as needed, then transfer to a warm dish.

  3. Step 3

Lightly grease a small frying pan with some of the extra butter and heat it. Crack in two commercially pasteurized shell eggs and season with one light saltspoon salt and half a light saltspoon white pepper. Fry for about three minutes, until the whites are set, following the product label for soft-cooked service.

  4. Step 4

Slide these two eggs over two of the fried banana halves. Repeat the same egg-pan preparation five more times, using the remaining ten eggs, five light saltspoons salt and two and a half light saltspoons white pepper, with additional butter only as needed to lightly grease the pan.

  5. Step 5

Arrange all twelve egg-topped banana halves on warm dishes and serve promptly.
