Sole Loomis with Tartare

Sole pieces spread with a cod and mushroom forcemeat, breaded and pan-fried, with cold Tartare.

Method

Steps

  1. Step 1

For the Tartare, finely chop the three small vinegar-pickled gherkins and one shallot. Measure one teaspoon drained capers and finely chop them. Wash and finely chop enough fresh herbs for half a teaspoon parsley, a quarter teaspoon tarragon and a quarter teaspoon chervil. In a clean cold bowl, whisk the one commercially pasteurized egg-yolk equivalent with half a teaspoon of the salt, half a teaspoon English mustard powder, one saltspoon cayenne and one tablespoon vinegar.

  2. Step 2

Whisk in the one gill olive oil drop by drop, mixing continuously until all the oil is incorporated. Add all the prepared pickles, shallot, capers and herbs and whisk briskly for four minutes. Put the complete Tartare in a clean sauce bowl and refrigerate at 40°F or colder until serving; avoid a prolonged room-temperature hold.

  3. Step 3

Have a fishmonger lift the four fillets from one fresh three-and-a-half-pound whole sole, skin and remove every bone. Cut each fillet into three equal slanting pieces. Season with the separate half teaspoon salt, three saltspoons white pepper and juice from the half lemon. Finely chop the one parsley branch, two bay leaves and one thyme sprig, turn the fish in these herbs and refrigerate at 40°F or colder until coating.

  4. Step 4

Pound the quarter pound fresh boneless cod with the one raw egg yolk, separate two saltspoons salt, separate one saltspoon cayenne and one saltspoon grated nutmeg to a smooth pulp. Press through a sieve into a clean bowl. Peel, clean and finely chop the three medium mushrooms, brown in the one teaspoon butter for five minutes, then mix briskly into the fish forcemeat.

  5. Step 5

Spread a thin layer of the complete forcemeat on both sides of each sole piece. Dip in beaten whole egg and coat lightly in fresh breadcrumbs. Heat the separate two tablespoons butter in a large frying pan, arrange the pieces without crowding and fry for about five minutes on each side. Continue until the thickest fish/forcemeat centres reach 70°C for two minutes and the egg coating is fully cooked to at least 160°F. Discard coating ingredients that touched raw fish.

  6. Step 6

Drain, dress on a hot dish lined with a clean food-safe folded napkin and serve promptly with the complete cold Tartare separately.
