Irish Minced-Beef Rolls in Pan Sauce

Small seasoned minced-beef rolls browned and cooked in their own covered-pan juices.

Steps

  1. Step 1

    Mix beef with onion, parsley, egg, fine crumbs, lemon zest, nutmeg, mace, salt and pepper. Form eight even short rolls without packing them hard.

  2. Step 2

    Heat dripping in a broad covered pan and brown rolls on all sides for about 8 minutes. Add 100 mL water, cover and simmer gently about 12–18 minutes, turning once.

  3. Step 3

    Probe several roll centres; each must reach 71 °C. Uncover briefly to reduce pan liquid to a spoonable sauce, then serve the rolls hot with their juices.
