Mutton Chops with Anchovy Butter

Broiled mutton rib chops with a little anchovy and lemon butter.

Method

Steps

  1. Step 1

Mix three quarters of an ounce of cool butter with one tablespoon of ready-to-eat culinary anchovy sauce and the strained juice of a quarter lemon in a clean bowl. Cover and refrigerate at 40°F or colder until needed.

  2. Step 2

Trim six French-cut bone-in mutton rib chops and flatten lightly. Mix one tablespoon of olive oil, one teaspoon of salt and half a teaspoon of pepper on a plate. Turn the chops repeatedly in the seasoning.

  3. Step 3

Arrange on a broiler and broil according to the appliance instructions for about four minutes on each side, continuing as needed until the thickest meat of each chop reaches at least 145°F, away from bone. Transfer to a warm clean dish and rest for at least three minutes.

  4. Step 4

Spread a little of the prepared anchovy butter over the hot chops. Keep any unused butter separately covered and refrigerated. If using paper bone frills, fit food-safe frills only after cooking, keep them away from heat and remove before eating. Serve promptly.
