Portugal Frozen Wine and Grape Pudding
Refrozen vanilla ice cream folded with wine, halved grapes, candied orange and whipped cream.

Step 1
Chill a clean freezer-safe mould. Halve and deseed grapes, finely chop candied peel and whip pasteurized cream to soft peaks.
Step 2
Let vanilla ice cream soften just enough to stir; quickly fold in wine, grapes, candied peel and whipped cream without melting it fully.
Step 3
Pack into the chilled mould, cover and freeze promptly until firm, at least 4 hours. Keep frozen and serve small portions; disclose wine.
