Cinnamon Flannel Cakes

Small cinnamon and nutmeg griddle cakes served with maple syrup.

Method

Steps

  1. Step 1

Sift the quarter pound of flour into a bowl. Add the two eggs, half ounce of icing sugar, quarter ounce of double-acting baking powder, one saltspoon of salt, half saltspoon of grated nutmeg and half teaspoon of ground cinnamon. Pour in the half pint of cold milk and whisk thoroughly until the batter is well mixed and thickened.

  2. Step 2

Lightly grease the bottom of a large frying pan with a little melted lard and heat thoroughly. Ladle the batter into rounds about two and a half inches across, four at a time without crowding.

  3. Step 3

Cook for about one and a half minutes on each side, turning once. Continue as needed, reducing the heat if the surfaces brown too quickly, until the centres reach 160°F and the cakes are set through with no wet or raw batter inside.

  4. Step 4

Transfer to a hot serving dish lined with a clean napkin and keep hot while cooking the rest. Repeat until all the actual batter is used, greasing the pan lightly as needed. Serve the maple syrup separately.
