Rice with Shallots, Egg and Smoked Salmon

Plain cooked rice lightly seasoned with soy and shallot, topped with chopped hard-boiled eggs, paprika and parsley, with smoked salmon offered as garnish.

Steps

  1. Step 1

    Rinse dry rice, add measured water and cook covered according to its variety until tender and the water is absorbed, about 15–18 minutes. Rest covered 5 minutes, then fluff.

  2. Step 2

    Meanwhile hard-boil eggs until yolks are fully set, cool enough to peel and chop. Finely chop the three shallots.

  3. Step 3

    Stir shallots and soy into the hot cooked rice and spread it on a warm platter. Cover with chopped eggs, a little salt, paprika and parsley.

  4. Step 4

    If using smoked salmon, take the ready-to-eat slices from the refrigerator only at service and place them at the edge of the platter. Serve promptly; do not warm and re-chill the salmon.
