Sausages with Fried Bananas

Pan-fried fresh pork sausages surrounded by lengthwise fried banana halves.

Method

Steps

  1. Step 1

Use twelve fresh raw country-style pork sausages. Remove any tying strings and prick the sausages with a fork. Heat the tablespoon of melted butter in a frying pan large enough for them in one layer, add the sausages and fry for about five minutes on each side. Continue as needed until their centres reach 160°F, checking several of the thickest with a clean thermometer.

  2. Step 2

Lift the cooked sausages onto a clean serving dish and keep hot at 140°F or above while finishing the bananas. Wash and peel the six bananas and split each lengthwise into two halves, making twelve halves in all. Roll the halves lightly in flour.

  3. Step 3

Keep the same sausage pan and its actual cooked butter and fat hot. Add the banana halves and fry for about two minutes on each side, until golden and cooked through, using successive batches if needed. Arrange all twelve fried halves around the cooked sausages and serve immediately.
