Irish Apple Pudding with Pastry Lid

Spiced sliced apples baked beneath a rich butter pastry lid and served by spoon.

Steps

  1. Step 1

    Rub cold butter into flour, sugar and salt, then add only enough cold water to bind. Chill 30 minutes and roll to a 3 mm sheet slightly wider than the fruit dish; keep cold until fruit is ready.

  2. Step 2

    Heat oven to 185 °C and butter a 23 cm deep pie dish. Layer apples with brown sugar, lemon zest and juice, cinnamon and cloves.

  3. Step 3

    Drape cold pastry over the fruit, seal to the dish edge and cut two small steam vents.

  4. Step 4

    Bake about 40–50 minutes until the lid is golden and apple juices bubble. Rest 15 minutes and spoon into bowls with crust pieces.
