Eggs Renauldt

Eggs baked in individual dishes with country sausage, tomato sauce and Parmesan.

Method

Steps

  1. Step 1

Preheat a conventional oven to 350°F. Lightly butter six ovenproof cocotte dishes and set them on a metal tray. Remove the casings from the three small raw pork sausages and slice the meat very finely.

  2. Step 2

Heat the tablespoon of butter in a frying pan and cook the sausage briskly for about three minutes as an initial guide, continuing until fully cooked and the sausage reaches 71 Celsius. Divide it evenly among the six dishes.

  3. Step 3

Bring the tablespoon of finished tomato sauce piping hot; if refrigerated, reheat thoroughly to 74 Celsius. Crack two eggs into each cocotte. Season each dish with half a saltspoon of salt and half a saltspoon of white pepper. Divide the one tablespoon of hot tomato sauce among all six dishes and sprinkle each with one light teaspoon of grated Parmesan.

  4. Step 4

Bake for about five minutes as an initial guide, continuing until the whites and yolks are set and each egg centre reaches 74 Celsius. Serve promptly in the cocottes.
