Cabbage Soup
A cabbage and potato soup simmered with salt pork, carrot and onion for flavour.
Method
Steps
Step 1
Remove the outer leaves and core from a very small green cabbage. Cut the cabbage into small pieces, wash well in cold water and drain. Put in a large saucepan with the half ounce of butter and cook, stirring frequently, for about ten minutes until the moisture is nearly evaporated.
Step 2
Add the three quarts of water, two light teaspoons of salt and half teaspoon of white pepper. Add the two-ounce piece of uncooked cured salt pork, the peeled whole carrot and peeled whole onion. Cover and boil gently for about thirty minutes.
Step 3
Peel and wash the two large raw potatoes, quarter them and slice finely. Add to the soup, cover again and boil gently for about one hour, until the vegetables are tender. Check that the centre of the pork has reached 70°C and remained at or above that temperature for two minutes; continue cooking as needed.
Step 4
Remove the salt pork, carrot and onion. Pour the cabbage and potato soup into a hot soup tureen and serve promptly.
