Curried Spinach with Stewed Prawns
Finely chopped tender spinach warmed with onion and curry powder, served beside gently stewed prawns and crisp croutons.

Step 1
Wash the spinach, boil in lightly salted water until tender, about 3–5 minutes, then drain very thoroughly and chop finely.
Step 2
Melt the butter in a wide sauté pan and soften the chopped onion for about 6 minutes without burning. Stir in curry powder and pepper for 30 seconds, then add spinach, cover and simmer for the source's five minutes, stirring once. Keep it moist but not watery.
Step 3
In a separate small saucepan bring the stock to a simmer. Add the cleaned prawns in one layer, cover and gently stew about 3–5 minutes, turning once, until opaque and at least 74 °C in the thickest pieces. Season and serve promptly; do not extend the prawn cook to the neighbouring recipe's thirty minutes.
Step 4
Spread the curried spinach on a warm platter and put the stewed prawns beside rather than stirring them through it. Offer crisp croutons separately if desired.
