Lemon Choux Fritters Carnaval
Small choux fritters scented with lemon peel, fried until golden and sprinkled with fine sugar.
Method
Steps
Step 1
Put the one gill cold pasteurized milk, one gill cold water, two ounces butter and one saltspoon salt in a saucepan. Bring to a boil, immediately add the quarter pound sifted flour and stir vigorously for two minutes.
Step 2
Remove the pan from the heat. Add one whole egg and stir briskly for one minute, then incorporate the other four eggs one at a time, stirring for one minute after each. Keep the paste covered and refrigerated at 40°F or colder if waiting; do not taste it raw.
Step 3
Finely chop the rind from the half medium lemon and mix it into the paste with a wooden spoon for two minutes.
Step 4
Heat refined canola oil in a suitable deep fryer according to the appliance instructions and fill limits, keeping below its smoking point. Use a tablespoon and a second spoon to lower small walnut-shaped pieces of paste carefully into the oil, keeping hands clear. Fry in suitable batches, turning occasionally with a skimmer, until puffed, golden and fully cooked at the centre, reaching at least 160°F. Continue until all the paste is cooked.
Step 5
Lift out, drain thoroughly on clean food-safe paper, sprinkle generously with fine sugar and serve hot.
