Pork with Sauerkraut and Wine
Tender pork simmered with sauerkraut, bay, cloves, wine and a little brown sugar.

Step 1
Season pork and place in a covered heavy pot with bay, cloves and a little water. Simmer gently about 45 minutes, adding a splash of water only if the pan dries; do not interpret this as fully cooked yet.
Step 2
Add sauerkraut, cover and simmer one hour. Add wine and brown sugar and continue until pork is fork-tender and has reached at least 71 °C; estimate 15–30 additional minutes.
Step 3
Remove whole bay and cloves. Serve pork and sauerkraut hot. Offer separately prepared potato dumplings only if available; they are not part of the braise.
