Pan-Fried Clove and Lemon Halibut

Flour-dusted halibut slices seasoned with a little clove, lemon and parsley, fried in olive oil until browned.

Steps

  1. Step 1

    Pat the halibut dry. Season both sides with salt, pepper and a small amount of ground clove; sprinkle with lemon juice and about half the chopped parsley.

  2. Step 2

    Put flour in a shallow plate. Dredge the fish lightly on both sides and shake off excess.

  3. Step 3

    Heat olive oil in a wide skillet over medium heat. Fry the fish without crowding for an estimated 4–6 minutes per side, according to thickness, until golden and the thickest point reaches 70 °C on a food thermometer.

  4. Step 4

    Lift to a platter, garnish with lemon slices and remaining parsley, and serve at once.
