Plum Pie

Fresh plums sweetened with powdered sugar and enclosed in folded butter pastry, with a melted sugar finish.

Method

Steps

  1. Step 1

Wash the pint of fresh plums, remove the stems and pits, and keep all the fruit. Put it on a plate, sprinkle with the two tablespoons powdered sugar and mix well.

  2. Step 2

Preheat a conventional oven to 350°F. Have the full chilled folded butter pastry from the linked preparation ready. Take half and roll it into a ten-inch round. Lightly butter a nine-and-a-half-inch pie plate and line it with this pastry.

  3. Step 3

Place the prepared sugared plums on the lower crust, leaving the one-inch clear margin around the edge. Roll the remaining half pastry into a round, fold it in two and make three light half-inch central incisions. Lightly moisten the pie edge with beaten egg, cover with the pastry and press firmly around the edge to enclose the fruit. Lightly brush the top with beaten egg.

  4. Step 4

Bake for about forty minutes, continuing as needed until the pastry is fully baked and golden and the plums are tender and hot.

  5. Step 5

Bring the pie to the oven door, liberally sprinkle the finishing powdered sugar over the top and return it to the same oven for about two minutes, continuing only as needed for the sugar to melt entirely. Remove, place on a dessert dish and serve hot.
