Baked Whole-Apple Rice Dumplings

Peeled cored apples enclosed in a cooked-rice, egg and cinnamon flour dough, baked with butter.

Steps

  1. Step 1

    Heat oven to 190 °C. Peel and core four apples without cutting them apart; sprinkle with 50 g sugar. Mix cold drained rice with egg, remaining sugar, cinnamon, salt and enough flour from the measured start to form a soft workable dough.

  2. Step 2

    Divide dough into four portions, flatten and enclose each apple completely, sealing seams. Put into a well-buttered dish and dot with remaining butter.

  3. Step 3

    Bake about 40–55 minutes until apples are tender and dough at its thickest reaches 74 °C. Rest briefly and serve warm with separately whipped cream if desired.
