Beefsteaks with Fried Apples
Broiled sirloin steaks with milk-and-flour-coated fried apples and herb butter.
Method
Steps
Step 1
On a cold plate, put three quarters of an ounce of cool butter, half a teaspoon of washed, dried and finely chopped parsley, a quarter teaspoon of chopped chervil, half a teaspoon of lemon juice, one saltspoon of salt and half a saltspoon of white pepper. Mash and mix thoroughly with a fork. Cover and refrigerate at 40°F or colder until needed.
Step 2
Use six tender sirloin steaks weighing four ounces each and flatten neatly. Mix one tablespoon of olive oil, the separate teaspoon of salt and half a teaspoon of pepper on a plate. Turn the steaks repeatedly in the seasoning.
Step 3
Arrange on a broiler and broil according to the appliance instructions for about four minutes on each side, continuing as needed until each reaches at least 145°F. Rest for at least three minutes, then keep hot at 140°F or above while finishing the apples.
Step 4
While the steaks rest and stay hot, peel and core three good-sized apples and cut each into four even slices. Dip in milk and lightly roll in flour. Heat canola oil in a suitable basket fryer according to its operating instructions and fill limits, then fry the apple slices in suitable batches for about four minutes, until golden and the flour coating is cooked.
Step 5
Lift and drain the apples on clean food-safe paper, then arrange around the steaks. Spread a little of the prepared parsley-chervil butter over the steaks and serve. Keep any unused butter separately covered and refrigerated.
