French-Pot After-Dinner Coffee
Freshly ground Java and Mocha coffee brewed by slowly filtering boiling water through the grounds in a warmed French coffee pot.
Method
Steps
Step 1
Mix two-thirds of a pound of food-grade raw Java coffee beans with one-third of a pound of food-grade raw Mocha beans. Butter a baking dish well, add the beans and roast in a moderate oven, stirring frequently in every direction, for about twenty-two minutes until an even golden brown. Watch continuously and keep the kitchen ventilated. Spread out to cool fully before putting the roasted beans in a clean covered jar.
Step 2
Measure six light tablespoons of the finished roasted beans from the jar and grind neither too finely nor too coarsely. Keep the remaining roasted beans separate; the drink uses only those six spoonfuls.
Step 3
Just before brewing, scald a clean French drip coffee pot with extra boiling water and discard this rinsing water. Fit the filter section with a clean food-safe linen or muslin coffee filter and add the ground coffee.
Step 4
Measure one and a half pints of fresh boiling water and pour it through the coffee little by little. Cover and keep the pot warm in a pan of hot water reaching about three inches up its side, keeping bath water out of the pot. Do not let the brewed coffee boil. Once it has filtered, serve promptly in six small after-dinner cups, preparing it no more than three or four minutes before service.
