Banana Fritters with Sabayon

Banana halves fried in a light egg batter and served on a warm vanilla sabayon.

Method

Steps

  1. Step 1

Separate the three batter eggs, keeping all three yolks and all three whites. Mix the half pound sifted flour, two tablespoons olive oil, half a teaspoon salt, one tablespoon icing sugar, the three yolks, half a gill cold water, one gill of the cold pasteurized milk and one teaspoon food-grade vanilla essence. Stir briskly for five minutes and keep refrigerated at 40°F or colder if it must wait. Do not taste the raw batter.

  2. Step 2

For the sabayon, mix the separate two pasteurized egg yolks with the one ounce plain granulated sugar using a wooden spoon for two minutes.

  3. Step 3

Bring the remaining one gill pasteurized milk and one gill cream to a boil in a saucepan with seven drops food-grade vanilla essence. Pour very gradually over the sauce yolks and sugar, stirring continuously.

  4. Step 4

Return the sauce mixture to a clean saucepan and heat gently, stirring continuously, for about three minutes without boiling, continuing until it reaches at least 160°F. Remove from the heat and strain through clean food-safe cheesecloth into a warm bowl. Keep warm for immediate serving.

  5. Step 5

Peel the six sound bananas and cut each crosswise into two pieces. Prepare a fresh bath of refined canola oil in a suitable deep fryer or deep stable pan, following its safe fill and heating instructions and keeping the oil below smoking.

  6. Step 6

Beat the reserved three egg whites until stiff and gently fold them into the batter for one minute. Roll the banana pieces in the batter and lower them carefully into the hot oil with a suitable utensil, in uncrowded batches. Fry for about ten minutes, turning occasionally, until the coating is golden and fully cooked to at least 160°F, with no raw flour batter, and the bananas are tender.

  7. Step 7

Lift out with a skimmer, drain thoroughly on a clean absorbent cloth or paper and trim any uneven batter edges. Pour all the warm sabayon onto a warm serving dish, put the banana fritters over it, dust lightly with the additional icing sugar and serve promptly.
