Grape Fritters
Small pan-fried fritters with sweet white grapes, cinnamon and nutmeg.
Method
Steps
Step 1
Break two eggs into a bowl. Add four heaping tablespoons of flour, one saltspoon of salt, two tablespoons of sugar, half a gill of milk, half a saltspoon of grated nutmeg and half a saltspoon of ground cinnamon. Whisk briskly until thick and completely free of lumps. Do not taste the batter raw.
Step 2
Take half a pound of small sweet white table grapes, wash, drain and remove their stems. Gently mix the grapes into the batter with a spoon.
Step 3
Heat two tablespoons of melted butter thoroughly in a large frying pan. Drop the batter into the pan by tablespoonfuls to make separate round fritters. Fry for about three minutes on each side, continuing gently as needed until the centres are fully set, no wet batter remains and they reach at least 160°F.
Step 4
Lift onto a dish lined with clean food-safe paper, dust lightly with powdered sugar and serve.
