Feta and Courgette Salad with Tomato
Feta, courgette and tomato are gently mixed with rocket and lettuce. Parsley and black pepper are included, and the dressed salad is served on a shallow platter.

Step 1
Wash and dry courgette, tomato, rocket, lettuce and parsley. Thinly slice courgette, dice tomato, tear lettuce and chop parsley. Crumble the feta.
Step 2
Whisk all olive oil and red wine vinegar with the black pepper and parsley.
Step 3
Combine courgette, tomato, rocket and lettuce in a wide bowl with the dressing, then gently fold in feta. Serve two generous portions on a shallow platter.
