Radish Broth
A clear beef broth simmered with fresh radishes, their leaves and stalks, vegetables and herbs.
Method
Steps
Step 1
Soak a large bunch of fresh red radishes, with their sound stalks and green leaves, in cold water for thirty minutes. Wash well, drain and finely slice the roots, stalks and leaves.
Step 2
Put the radishes in a saucepan with two pounds of finely chopped raw beef shin, a sliced carrot, a sliced onion, a sliced leek, two branches of parsley, a bay leaf, a sprig of thyme and a clove. Add three quarts of water and one teaspoon of salt, then mix lightly.
Step 3
Bring to a boil, stirring to disperse the finely chopped beef and checking with a food thermometer that it reaches at least 160°F throughout. Reduce the heat and simmer slowly for two and a half hours.
Step 4
Strain through a double layer of clean cheesecloth, divide the broth among six cups and serve hot.
