Broiled cured ham coated with mustard butter and golden breadcrumbs.

Method

Steps

  1. Step 1

Prepare full devilled butter once. Mix 14 g softened butter with half a teaspoon English mustard powder, one teaspoon white-wine vinegar, one teaspoon Worcestershire sauce, one-quarter teaspoon salt, one-eighth teaspoon cayenne and one pasteurized yolk equivalent.

  2. Step 2

Mix thoroughly with a spoon until uniform, cover and refrigerate until coating.

  3. Step 3

Use six raw lean salt-cured ham slices about 5 mm thick.

  4. Step 4

Broil the six ham slices for two minutes per side.

  5. Step 5

Coat each slice with the prepared devilled butter, then roll lightly in fresh breadcrumbs.

  6. Step 6

Return the coated slices to the broiler for one minute per side.

  7. Step 7

Continue broiling until each ham slice reaches 71 °C.

  8. Step 8

Remove, dress on a hot dish and serve.
