Spareribs with Cabbage

Salted pork ribs gently boiled with white cabbage and potatoes.

Method

Steps

  1. Step 1

Select six pieces of commercially prepared raw, unsmoked salted pork spareribs that require cooking and whose supplier instructions are compatible with a thirty-minute soak. Soak in plenty of cold potable water for thirty minutes, then drain and keep refrigerated until needed.

  2. Step 2

Remove the outer leaves and stalks from one medium white cabbage and cut into even quarters. Place in a saucepan with one gallon hot water, one teaspoon salt and half a teaspoon white pepper. Cover and gently boil for forty-five minutes.

  3. Step 3

Add the drained ribs, cover again and gently cook for forty-five minutes longer.

  4. Step 4

Peel six medium raw potatoes, add them to the pan and boil for forty minutes as a guide, until tender. Before serving, use a clean food thermometer to check the thickest meat of each rib piece, away from the bone, has reached at least 71°C.

  5. Step 5

Lift the cabbage onto a large serving dish, arrange the potatoes around it and place the ribs on top. Serve promptly.
