Turkey Bone, Rice and Tomato Soup

Turkey-bone broth with diced leftover turkey, rice, vegetables and tomato sauce, served with croutons.

  1. Step 1

    For the proposed tomato sauce, soften the onion in olive oil for 5 minutes; add garlic for 30 seconds, then tomato, salt, pepper and paprika. Simmer uncovered 15–20 minutes until spoonable, adding a little water only if it catches. Measure about 240 mL for the dish.

  2. Step 2

    Remove and refrigerate the already cooked turkey meat. Simmer the bones in cold water with onion, carrot, celery and parsley for about an hour; strain carefully and discard bones.

  3. Step 3

    Add the proposed tomato sauce to the strained broth. Season and simmer 10 minutes; add cooked rice and chilled diced turkey.

  4. Step 4

    Heat until turkey pieces reach 74 °C and serve immediately with optional croutons.
