Lamb Chops Mixed Grill
Broiled lamb chops and kidneys with bacon and seasoned tomato halves.
Method
Steps
Step 1
Season the six lamb chops with the half a teaspoon salt for the chops and two saltspoons white pepper for the chops. Arrange on a double broiler.
Step 2
Have a butcher clean the three fresh lamb kidneys. Split each into two even halves and season with three saltspoons salt and one saltspoon finely ground white pepper for the kidneys. Broil the chops and kidneys for about three minutes per side, keeping their raw juices away from other food. Continue cooking each kidney half until its centre reaches 75°C for thirty seconds. Cook the chops until their centres reach 145°F away from bone, then rest the chops for three minutes on a clean hot dish.
Step 3
Broil the six raw bacon slices, turning as needed, until fully cooked to at least 71°C. Keep hot on a clean dish.
Step 4
Trim a thin round from each end of the three tomatoes, halve them crosswise and season the six halves evenly with the remaining half a teaspoon salt for the tomatoes, half a teaspoon sugar and remaining two saltspoons finely ground white pepper. Broil for about three minutes on each side until cooked, handling gently.
Step 5
Arrange the six chops, six kidney halves, six bacon slices and six tomato halves together on a hot dish and serve promptly.
