English Mutton Chops

Lean mutton chops flattened, seasoned with oil, salt and white pepper, then broiled and served with watercress.

Method

Steps

  1. Step 1

Have six lean mutton chops, each weighing half a pound before trimming. Trim neatly, cover with a clean food-safe layer and gently flatten with the flat side of a cleaver into rounded forms.

  2. Step 2

Turn the chops in one tablespoon of cooking oil. Season all over with one tablespoon of salt and half a teaspoon of white pepper.

  3. Step 3

Prepare a hot broiler or grill and arrange the chops on it. Broil for about eight minutes on each side, continuing as needed until a food thermometer inserted into the thickest part of each chop, away from bone, reads at least 145°F.

  4. Step 4

Transfer to a clean warm dish and let rest for at least three minutes.

  5. Step 5

Garnish with a little washed watercress and serve.
