Plain Broiled Shad Roes

Intact shad roes broiled with oil and seasoning, finished with melted butter, parsley and lemon.

Method

Steps

  1. Step 1

Mix one tablespoon olive oil, one teaspoon salt and half a teaspoon finely ground white pepper on a plate. Use two fresh intact food-grade American shad roes, about one pound each, supplied professionally cleaned by a regulated fishmonger. Keep refrigerated at 40°F or colder until ready to cook, then repeatedly turn them through the seasoning without breaking them.

  2. Step 2

Arrange the intact roes on a broiler and broil according to the appliance instructions for about eight minutes per side, continuing until the thickest centres reach 145°F for fifteen seconds. Handle gently with clean utensils after cooking.

  3. Step 3

Arrange on a hot dish, pour a little freshly melted butter over, garnish with a little fresh parsley greens and six lemon quarters from one and a half lemons, and serve promptly.
