Moscovite Jelly
A lemon and sherry jelly whisked to a froth, chilled in a mould and served on a folded napkin.
Method
Steps
Step 1
Use a copper basin with an intact food-safe, nonreactive lining suitable for warm acidic food and whisking. Keep the jelly away from exposed copper or brass, and choose a whisk that will not damage the lining. Measure one and a half pints of water. Reserve a cold portion sufficient to wet and hydrate all the one ounce of Knox pure unflavoured gelatine powder, sprinkle the powder over it and let the granules swell fully. Keep all this water with the gelatine.
Step 2
Place the remaining measured water in a small saucepan with the juice of one lemon and the half-pound of sugar. Add all the hydrated gelatine and its water. Stir over low heat until the sugar and gelatine are completely dissolved and no granules remain. Do not boil.
Step 3
Strain through a clean fine cloth into the prepared copper basin set in an external ice-water bath. Stir in the half gill of dry Sherry. Keep the cooling water outside the basin.
Step 4
Watch the jelly closely as it cools. As soon as it begins to congeal, whisk the jelly itself until it becomes a uniform froth, keeping it in the cold bath. Do not add cream, egg whites or other ingredients, and do not wait for it to become a solid gel.
Step 5
Pour the still-transferable froth promptly into a one-quart jelly mould without overflowing or pressing the foam down. Keep any excess finished mixture separately. Set the mould in an external ice-water bath below its rim, then refrigerate promptly; cool any excess under the same conditions.
Step 6
Cool the centre to 20°C or colder within two hours after heating stops, then to 4°C or colder within the next four hours. Keep refrigerated until thoroughly firm and able to hold its shape when unmoulded. Do not freeze it solid or rely on a fixed setting time.
Step 7
Dip the outside of the mould briefly in tepid water, lift it out immediately and wipe it dry. Unmould the cold jelly onto a cold serving dish with a clean folded napkin and serve.
