Paprika Beef and Potato Stew

Tender beef and diced potatoes in a paprika sauce lightly finished with milk and flour.

  1. Step 1

    Pat the beef dry. Heat drippings in a covered heavy pot, brown beef in batches, season with salt and pepper, then cover and gently stew for the source's initial 30 minutes, adding a splash of water if dry.

  2. Step 2

    Add sliced onion, hot water and paprika. Continue a gentle covered simmer about 40–60 minutes more until beef is nearly fork-tender; add water only to prevent scorching.

  3. Step 3

    Add diced potatoes for their final 20–25 minutes, until beef and potatoes are both tender but potato cubes remain distinct. Whisk flour into cold milk, stir into the simmering sauce and cook 3–5 minutes until no raw flour taste remains. Add parsley and serve hot.
