Pork Chops with Fried Apples
Pork chops slowly fried in lard and served with lightly coated fried apples.
Method
Steps
Step 1
Lightly flatten the six fresh pork chops. Season all around with the teaspoon of salt and half teaspoon of white pepper. Heat the tablespoon of lard in a frying pan large enough to hold the chops side by side, or work in batches. Fry slowly for about eight minutes on each side, until the centre reaches at least 70°C for two minutes. Put on a hot serving dish and keep hot at 140°F or above while the apples cook.
Step 2
Wash, peel and core the three apples. Cut each into four even slices, making twelve pieces. Dip them in cold milk and lightly roll in flour.
Step 3
Heat enough canola oil for deep-frying to 350°F in a suitable fryer, within its fill limits. Fry the coated apple slices in small batches for about ten minutes, until golden and tender. Lift out with a skimmer and drain thoroughly. Arrange the fried apple slices around the pork chops and serve hot.
