Broiled Bacon Diable
Crisp bacon slices with a light mustard, cayenne and breadcrumb coating.
Method
Steps
Step 1
Prepare the half batch of devilled butter by mixing a quarter ounce butter, one saltspoon English mustard powder, half a teaspoon white-wine vinegar, half a teaspoon Worcestershire sauce, half a saltspoon salt, a quarter saltspoon cayenne and commercially pasteurized liquid yolk equivalent to half an egg yolk. Mix thoroughly and keep cold until needed.
Step 2
Trim bones and tough edges from the raw bacon and cut twelve even crosswise slices about one-fifth inch thick. Arrange on a clean double broiler and broil over brisk heat for about two minutes on each side, continuing until fully cooked and crisp. Let cool slightly just enough to handle.
Step 3
Spread a thin layer of the prepared devilled butter on both sides of every slice and roll lightly in breadcrumbs. Return to a clean broiler and broil for about one minute on each side, until the coating is hot and cooked through to at least 160°F. Dress on a hot dish and serve promptly. Discard coating mixture and crumbs used for dipping.
