Curried Beef Meatballs with Tomato Sauce and Rice
Small beef, celery and curry meatballs browned in butter, served on rice beneath a seasoned tomato sauce.

Step 1
For the proposed sauce, soften 60 g onion in olive oil for 5 minutes. Add garlic for 30 seconds, then tomato, 1/2 teaspoon salt and paprika. Simmer uncovered 15–20 minutes until spoonable; keep warm.
Step 2
Cook rice in lightly salted water until tender; drain if needed and keep warm.
Step 3
Mix beef, celery, small onion, parsley, eggs, breadcrumbs, curry, 3/4 teaspoon salt and pepper. Form about 20 small balls of even size.
Step 4
Brown the balls in butter in a wide pan, turning gently. Cover and cook over moderate heat until the centres reach 71 °C; use a thermometer rather than colour alone.
Step 5
Arrange meatballs on a border of rice and pour the warm proposed tomato sauce over the meatballs and rice. Serve hot.
