Beef Curry with Rice and Fried Apples
Tender beef pieces in a lightly thickened curry sauce, served inside a ring of rice with browned apple slices and parsley.

Step 1
Cut beef into 2.5 cm pieces, season with salt and pepper and toss with two tablespoons flour. Prepare the cooked rice and keep it warm for serving.
Step 2
Heat olive oil in a heavy covered pan and brown beef in batches without crowding. Return all beef to the pan, add onion and cook until softened, about 5 minutes. Stir in vinegar, curry powder and half a cup hot water.
Step 3
Cover and simmer gently for about 60–90 minutes, stirring occasionally, until beef is tender. Add a small splash of hot water only when needed to prevent the pan drying before the beef is tender; the sauce should remain concentrated.
Step 4
Mash one tablespoon butter with one tablespoon flour, stir into the simmering beef sauce and cook several minutes until the flour taste disappears and the sauce coats the meat. In a separate skillet, fry apple slices in the remaining tablespoon butter until golden on both sides.
Step 5
Arrange warm cooked rice as a border on a platter, spoon the beef curry into the centre, scatter parsley over the rice and arrange fried apple slices at the edge. Serve hot.
