Cod with Small Onions and Potatoes in Milk

Pieces of previously cooked cod gently reheated with small boiled onions and sliced cold potatoes in a buttery milk sauce.

  1. Step 1

    If starting from raw ingredients, boil fresh cod until it reaches 70 °C, then cool it promptly; boil the small onions and potatoes until tender and cool the potatoes for neat slicing. Do not use unsafely stored leftovers.

  2. Step 2

    Melt butter in a wide saucepan. Add the boiled onions and cold potato slices, then place large pieces of cooked cod among them.

  3. Step 3

    Pour in milk, add pepper, cover and simmer very gently for about ten minutes. Check that the fish and sauce reach 74 °C throughout while the cod pieces remain intact.

  4. Step 4

    Taste before adding any salt and serve hot in shallow bowls with the onions and potato slices still distinct.
