Seed Cakes

A plain butter cake flavoured with caraway seeds.

Method

Steps

  1. Step 1

Preheat the oven to 350°F. Line one cake tin with baking paper and butter the paper. Sift the half pound of plain flour.

  2. Step 2

Put the two ounces of butter in a bowl and beat briskly with a spatula for five minutes. Add the four ounces of granulated sugar and beat thoroughly for another three minutes.

  3. Step 3

Beat in the three eggs one at a time, incorporating each before the next. Very gradually stir in all the sifted flour and a few caraway seeds. Put all the batter in the prepared tin.

  4. Step 4

Bake for about forty minutes. Check that the top is golden, the edges begin to pull away from the tin, the centre springs back gently and a thin knife inserted into the centre comes out without wet batter; continue baking as needed to reach these signs.

  5. Step 5

Remove from the oven and let cool enough to handle safely. Detach the paper, cut the whole cake into six equal pieces and serve.
