Mutton Steaks with Colbert Sauce

Pan-fried mutton leg steaks served with Colbert sauce mixed into their skimmed pan juices.

Method

Steps

  1. Step 1

Have three fresh raw mutton leg steaks, each three-quarters of a pound, cut from a tender leg. Make a few incisions around the surrounding skin and season the three steaks with the teaspoon salt and half teaspoon ground white pepper.

  2. Step 2

Heat the tablespoon melted butter in a frying pan. Arrange the three steaks beside one another and cook for about six minutes on each side. Check the thick centre of each steak away from bone reaches 71°C during this same frying phase, continuing as needed before lifting; the time guide alone does not establish doneness.

  3. Step 3

Lift the cooked steaks onto a hot dish. Skim the fat from the same pan juices. Pour in the amount required of hot prepared Colbert sauce, mix it well into these juices, then pour the combined sauce over the steaks and serve promptly.
