Lamb Rack Braised with Root Vegetables

A pork-barded rack of lamb, first roasted, then braised with small carrot and turnip scoops, browned white onions and demi-glace.

Method

Steps

  1. Step 1

Have the linked finished demi-glace and unsalted White Broth ready, the latter prepared with veal bones and aromatics only. Keep any chilled preparations refrigerated until needed.

  2. Step 2

Heat a conventional oven to 450°F. Use one whole fresh rack of young lamb weighing three pounds before trimming. Rub it all around with the teaspoon of salt and half teaspoon of ground black pepper. Cover the surface with thin slices of raw unsalted pork fatback and secure them with food-safe butcher’s string. Put the rack in a small roasting tin with the two tablespoons of water. Roast for about 15 minutes, watching for browning without burning; this first stage does not finish the meat.

  3. Step 3

Lower the oven to 180°C. Transfer the same rack to a small braising pan with a well-fitting oven-safe lid. With a very small scoop, take all the pieces you can from the large scraped carrot and the turnip and add those pieces around the lamb. Reserve or discard the unused trimmings separately.

  4. Step 4

Heat the tablespoon of butter in a frying pan. Gently brown the twelve very small peeled white onions for about 10 minutes, turning them. Drain them and add them to the lamb; leave excess frying fat behind.

  5. Step 5

Tie the two parsley branches, garlic clove, bay leaf and whole clove into a small bouquet and add it to the braising pan. Set the pan on the hob, pour in the half gill of white wine and let it reduce for about 10 minutes.

  6. Step 6

Measure one gill of the finished demi-glace before loosening it with a little hot unsalted White Broth. If the demi-glace was refrigerated or thawed, bring this diluted portion to a full rolling boil while stirring and verify at least 74°C. Add it to the braising pan with the one gill of water. Cover and cook in the 180°C oven for about 40 minutes. Continue as needed until the carrot and turnip pieces are tender and both the thickest lamb, clear of bone, and the thickest folded areas of pork covering reach at least 71°C before removal. The time is a guide.

  7. Step 7

Remove the string and lift the whole rack onto a large hot dish. Remove the herb bouquet. Pour all the actual remaining contents of the braising pan, including the onions, root pieces and sauce, over the lamb and serve promptly.
