Baked Spaghetti with Melted Cheese and Milk

Tender spaghetti coated in a simple buttery milk-and-cheese sauce, topped with more grated cheese and baked until bubbling.

  1. Step 1

    Heat the oven to 190 °C and butter a medium baking dish lightly. Boil the spaghetti in salted water until just tender, about 8–10 minutes, then drain without rinsing.

  2. Step 2

    Melt the measured butter in a saucepan, add the milk and bring just to steaming. Remove from hard heat and stir in 225 g grated cheese in small handfuls until melted and smooth; season cautiously with pepper and a little salt.

  3. Step 3

    Toss the warm spaghetti through the cheese-milk sauce and transfer to the baking dish. Scatter the remaining 30 g cheese and a little pepper over the top.

  4. Step 4

    Bake about 15–20 minutes until hot throughout, bubbling at the edges and lightly browned above. Serve hot while the sauce still coats separate strands.
