Sweetbreads Schwerin
Whole heart sweetbreads braised with wine and broth, finished in a cocotte with a creamy truffle sauce.
Method
Steps
Step 1
Before the linked blanching preparation finishes, have the ingredients and cookware ready and heat a conventional oven to 325°F. Have two gills of finished hot white veal stock from the linked preparation ready. Use a sautoire that holds the six whole sweetbreads over the aromatic bed and a separate oven-safe cocotte for finishing.
Step 2
Take six actual whole freshly blanched heart sweetbreads from the linked blanching preparation, pare any remaining membrane promptly and continue immediately into this cooking. Finely slice the medium carrot, onion, one ounce uncooked salt pork and two parsley branches. Place these in the sautoire with one tablespoon melted butter and lay the sweetbreads on top. Season with one teaspoon salt and half a teaspoon white pepper and cook on the stovetop for five minutes.
Step 3
Add one gill white wine and two gills finished hot white veal stock. Cover with lightly buttered food-safe paper rated for this oven temperature. Bring to a brisk boil for ten minutes, then put the pan in the oven with that paper in place for twenty minutes as a guide.
Step 4
Bring the pan to the oven door, carefully remove the paper and pour in two tablespoons sherry. Baste well with the same gravy and return to the oven uncovered for ten minutes as a guide. Watch that the gravy remains available for basting and does not scorch. Before lifting the sweetbreads, check each whole organ in its thickest part and continue this same cooking as needed until tender and at least 71.1°C; the salt pork must also be cooked through, at least 71°C. Lift the cooked sweetbreads into the warm oven-safe cocotte and proceed promptly with the sauce.
Step 5
Mix half an ounce butter and half an ounce flour in a small saucepan. Strain the same sweetbread gravy through clean cheesecloth into this butter-flour paste, removing the vegetables, parsley and pork solids. Skim the fat from the surface. Mix sharply until the sauce comes to a boil, add the small drained truffle cut in small squares, mix lightly and cook on the stovetop for five minutes, until the sauce is smooth and thickened and the flour cooked.
Step 6
Mix one actual pasteurized egg yolk with half a gill cream. Take the sauce off the heat, stir a little of this same hot sauce into the yolk and cream, then return the liaison to the sauce while mixing sharply. Pour the sauce, retaining its truffle squares, over the whole sweetbreads.
Step 7
Return the cocotte to the 325°F oven for the final ten minutes as a guide. Heat gently until the sauce is hot throughout and the egg-containing mixture reaches at least 74°C in its thickest areas around the sweetbreads. Keep the sauce smooth and avoid vigorous boiling; supervise and adjust gentle heat as needed. Remove and serve promptly.
