Sweetbreads en Cocotte, au Porto
Whole calf heart sweetbreads simmered here with prepared white veal broth, white wine and tarragon, then baked individually with port and a little cream.
Method
Steps
Step 1
Preheat a conventional oven to 350°F and have six oven-safe cocotte dishes ready. Before the linked blanching preparation finishes, put the half gill white wine, two gills hot finished white veal broth, a few tarragon leaves, half teaspoon salt, two saltspoons white pepper and half ounce butter in the destination saucepan.
Step 2
Transfer six actual whole blanched and trimmed calf heart sweetbreads directly from the linked blanching preparation into that saucepan. They are partly cooked intermediates and must continue cooking now; do not serve, cool or refrigerate them after blanching. Cover and simmer gently for about twenty-five minutes, until each sweetbread reaches at least 71.1°C in its thickest centre, checked individually with a clean food thermometer. Continue the simmer if necessary; twenty-five minutes alone does not establish doneness.
Step 3
Lift out the fully cooked whole sweetbreads and put one in each of the six cocottes. Divide the one gill port wine evenly among all six dishes.
Step 4
Mix the three saltspoons salt, one saltspoon cayenne and one saltspoon grated nutmeg and sprinkle evenly over the six sweetbreads. Cover each with a little pasteurized cream.
Step 5
Set the cocottes on a baking tray and bake at 350°F for about fifteen minutes, until the cream and sweetbreads are thoroughly hot. Serve promptly.
