Beef and Corn Soup with Poblano

Beef mince, corn and poblano simmer with onion and chipotle peppers in adobo. This very spicy soup is served with lime wedges.

  1. Step 1

    Use sweetcorn kernels and 120 g canned chipotle peppers in adobo, chopped; this makes a very spicy soup. Deseed and dice poblano, chop onion and cut washed lime into wedges. Handle raw beef mince separately and clean hands and utensils.

  2. Step 2

    Heat olive oil in a 4 litre saucepan over medium heat. Cook onion and beef mince for 8–10 minutes, breaking the meat into small crumbles. Add corn, poblano, chipotle and 1400 ml water once.

  3. Step 3

    Bring to a boil and simmer for 15 minutes until poblano is tender. Check that the meat mixture reaches 71°C in several places with a clean digital thermometer. Serve six bowls with lime wedges.
