Braised Rack of Veal with Glazed Onions
A veal rack braised over aromatics with white wine and brown sauces, served with whole glazed onions and strained gravy.
Method
Steps
Step 1
Preheat a conventional oven to 325°F. Have the portion of finished glazed onions needed to garnish this rack ready and hot. Measure one and a half gills finished demi-glace before loosening only this portion with a little hot ready-to-use unsalted veal broth. If refrigerated or thawed, bring the loosened sauce to a full rolling boil while stirring and check at least 165°F; use promptly.
Step 2
Have the spinal bone neatly trimmed from one three-pound tender white veal rack, leaving the ribs attached to the rack. Arrange the actual raw mirepoix portion needed as a bed in an oven-safe braising pan and lay the veal over it. Season with one teaspoon salt, half a teaspoon pepper and one saltspoon grated nutmeg. Pour one tablespoon melted butter into the bottom of the pan, cover and cook on the stovetop for ten minutes without burning.
Step 3
Add a quarter of a pint white wine and reduce its liquid to one third of the starting wine amount, not merely by one third. Add the measured loosened demi-glace and one gill finished tomato sauce. Cover tightly and braise in the 325°F oven for about fifty minutes, continuing as necessary until the thickest veal reaches at least 71°C away from bone and is fork-tender; check that the raw pork in the mirepoix bed has also reached at least 71°C.
Step 4
Place the veal on a large hot dish and arrange the required portion of finished glazed onions around it. Skim fat from the actual cooking sauce, reduce it over the stovetop for ten minutes, strain through a fine conical strainer over the veal and serve promptly.
