Lamb Chops Sautés Minute

Six sautéed lamb chops with heart-shaped croutons and a lemon, parsley and demi-glace pan sauce.

Method

Steps

  1. Step 1

Measure half a gill of finished demi-glace, then loosen this measured portion with a little hot unsalted White Broth prepared with veal bones and aromatics only. If the demi-glace was refrigerated or thawed, bring the diluted portion to a full rolling boil while stirring and verify 165°F before use.

  2. Step 2

Neatly pare six tender bone-in lamb rib chops and gently flatten the meat, keeping each chop whole. Season all around with half a teaspoon salt and three saltspoons ground black pepper.

  3. Step 3

Heat the one and a half tablespoons melted butter in a large frying pan or sautoire that holds the six chops side by side in one layer. Add the chops and cook briskly for about three minutes on each side as a guide, continuing as needed until the thickest centre of each chop reaches 145°F (63°C), measured away from the bone, before removing it from the heat.

  4. Step 4

Dress the chops on a hot serving dish, alternating them with six actually finished small golden heart-shaped bread croutons. Let the chops rest for at least three minutes before carving or eating, keeping the dish warm while finishing the sauce.

  5. Step 5

Pour the used cooking butter out of the same pan and reserve it separately. Thoroughly heat the pan, then pour in the separate half gill water and the diluted measured half gill demi-glace. Add the juice of half a sound lemon and half a teaspoon freshly chopped parsley.

  6. Step 6

Briskly stir and scrape the bottom of the pan and cook the sauce for four minutes. Keep the reserved cooking butter out of this sauce.

  7. Step 7

Pour the same pan sauce over the chops and serve promptly after the chops have completed their rest.
